I, for one, really sucked at creating plant-based meals that I could see as tasty, because we all know a little sprinkle of chicken goes a long way. But fear not! I’ve rounded up some incredible vegan creators who not only talk the talk but walk the walk and whip up beautiful meals that’ll make you rethink what being plant-based is all about.

So, if you like Caribbean food with a vegan twist, Jenna is your gyal! I came across her page when I saw a recipe for vegan jerk chicken made with oyster mushrooms and my world was literally shook. She creates anything from curry, stews, pastas and even hemp brownies on her feed that will help you venture into a new culinary world that gives any vegan diet a kick.
Jerk Chick’n 🇯🇲 – another plant-based, creative & fun recipe made with king oyster mushrooms! I loveee jerk chicken and this alternative really hit the spot 😋💛 As some of you know, I love the creative element of creating these recipes but as a busy bee I mostly cook quick meals and save the extra creative recipes for occasions. However this recipe is sooo good and really hit me culturally that I will be adding it to my rotation! The boneless version only takes 15 mins to prep and is by far my favourite of the 2 options! 🌱 6 king oyster mushrooms 🌱 1 tbsp nutritional yeast 🌱 1 tsp sage 🌱 1 tbsp all purpose seasoning 🌱 1 tsp allspice 🌱 1-2 tsp jerk marinade 🌱 3 rice paper sheet Coating Seasoning 🌱 1-2 tsp jerk seasoning 🌱 ½ tsp all purpose 🌱 ½ tsp paprika 🌱 1 tbsp oil Servings: It takes 150g which is about 2 shrooms for each piece. So this recipe makes about 3 pieces of mock meat. Boil the mushrooms in the sage, all purpose seasoning, 1-2 tsp jerk marinade and nutritional yeast for about 10 mins. Then drain the water and pat try with a kitchen towel. Assemble as shown in the video but layer it up in the center for the drumsticks to make it thick. For the boneless piece, layer it up to the desired thickness. Airfry/roast for 15-20 min at 190oC. Tips: I recommend making your own jerk marinade if you can’t take a lot of spice. Tlayuda is an iconic street food from Oaxaca, Mexico. I’m not saying that this is “authentic” or exactly like the ones I ate in Mexico but I did what I could with the ingredients that were accessible to me. It is a large crispy tortilla topped with refried beans, cheese, meats, and vegetables. It’s delicious and similar to a tostada — not as crispy, thinner and ten times better! Made some Vegan Soup Dumplings and they did not disappoint. They were better than I remembered. Fun fact a lot of soup dumplings have gelatin in them making them not vegan. Don’t worry though. Now you can just make this recipe. 🌱🥟 Soup Dumpling Broth ingredients: 2 cups water 2 tablespoons tamari 1 tablespoon vegan oyster sauce Half vegan chicken bouillon cube 3-5 dried shiitake mushrooms Scallions Crushed red pepper White pepper Pinch of sugar Pinch of salt (if needed) Simmer for 10 mins and then whisk in 2-3 tbsp of agar agar powder. Transfer to the fridge to cook down.
